Seconding that! I don't think gingerbread is really for eating... but I hate spicy baked goods... it just doesn't seem right. Baked goods should be buttery, chocolaty, or vanillaey (not really a word).

I have strong opinions about baked goods... ;)

I second the googling marthat and foodtv they are about the best I have a pretty good one also::

1/2 c of real butter soft
1/2 c packed brown sugar
1/2 c molasses
1 egg3 c all purpose flour
1 tsp baking soda
1 tsp ginger
1/2 tsp salt
1/4 sp cinnamon
1/8 tsp cloves
if you have pumpink pie spice it can be used in place of all the spices using 1tbs
1-2 tbs cold water

in a large bowl cream butter brown sugar until fluffy beat in mollasses and egg. sift together dry ingr. stir in alternating with water. cover and chill for 1 hour
on a well floured surface roll dough to 1/4 inch cut with a lightly floured cutter bake on lightly greased sheets @ 350* for about 9-11 min cool on wire racks decorate

omg
I just pulled out my recipe for gingerbread people and you are in luck...I have it here at work with me!
This is the easiest and tastiest people I have ever baked.

Gingerbread People

1 pkg Spice Cake Mix
2 tsp ground ginger
2 large eggs
1/3 C vegetable oil
1/3 C dark molasses
1/2 C flour

1. Combine all ingredients in large bowl, mix well.
2. Refrigerate dough for at least 2 hours.
3. Preheat over for 375. Roll dough to 1/4 inch thickness on lightly floured surface. Cut with cook cutter and place on ungreased cookie sheets.
4. Bake at 375 for 8 to 10 minutes or until edges begin to brown. Coll several minutes on cookie sheet, then remove to racks to finish cooling.

I like to add faces and such with a simple frosting of powder sugar and milk or water. It hardens nicely and stays put.
These are super easy and totally tasty!
Good Luck.

and these are just as tasty as the pre-made kind and kids (and you) will want to eat them.
Not too spicy.
